Yummy Asparagus Recipe
I use this recipe as an appetizer for parties or a side at dinner. The best part is it is served cold so you can make it WAY before a party or before serving dinner.
Trim asparagus to about 8 to 9 inches (this is mostly for esthetics)
Place in boiling water for about 2 minutes (until bright green). Didn't know this before but this is called Blanching.
In a flat but with sides (like casserole) dish place 1/2 soy sauce, 1/2 cup sugar, about 5 drop sesame oil. Let sit in refridgerator until cold (about an hour-or longer if you need it).
To serve, remove asparagus from sauce and sprinkle with sesame seeds.

Yummy quick dinner recipe
Chicken and Brocoli Alfredo
I have been working really hard to make a meal plan every week and found it easier to have my kids give me their ideas for the meal plan.
My 13 year old son thought up tonight's super easy dinner (and all I had to buy for it was the brocoli!)....
4 chicken breast (the ones I got on that super coupon deal at Safeway a couple of weeks ago)
2 bunches of brocoli (about 3 cups cut up)
1 box Smart Taste Penne Pasta (free from Albertson's)
Garlic powder
salt, pepper to taste
1 jar Classico Alfredo Sauce (I got it super cheap at Target)
Cube the chicken breast and brown on Med-high in a pan that you coated with about a 1tsp Canola (or similar) Oil. Flavor with Garlic Powder, Salt and Pepper.
Once the chicken is no longer pink, start your water to boil for the pasta. Add the brocoli to the chicken along with a 1/2 cup water. Let simmer until the pasta water comes to a boil. Once the brocoli is bright green (or just a little longer if you like it tender) remove from heat.
When the pasta is al dente, drain and return to the pot. Toss the chicken, brocoli and pasta together and add full jar of Alfredo Sauce.
My kids loved it sprinkled with a little fresh Parmesan Cheese. I also thought it would be a little 'prettier' with some red pepper.

Whole chicken recipe
Super yummy and easy! My boys are the pickiest eaters and they will eat this (they each get a leg!).
It's a variation of Jamie Oliver's Roasted Chicken
Approx 4 1/2 lb whole chicken
salt
pepper
one lemon
whole garlic bulb (with cloves pealed)
olive oil
fresh thyme and rosemary (about a handful)
In the morning, rub the chicken down with a generous amount of salt and pepper. Set aside in the fridge.
When you're ready to cook, preheat your oven to 375 degrees. Take a lemon (we've even used an orange when we didn't have a lemon) and microwave it for 1 minute. Carefully pierce it several times (careful, it will be juicy AND hot). Place the lemon and garlic inside the chicken along with the rosemary and thyme. Rub the chicken with about 1/2 cup of olive oil. Bake for 45 mins, baste and bake for an addition 45 mins. You'll know the chicken is done when the thigh meat pulls easily from the bone and the juices run clear).
Of course, don't rely on time for the doneness of your chicken. Be sure to use a meat thermometer!

Baked Potato Soup Recipe
My husband is an AMAZING cook! He came up with this awesome recipe! We used nonfat milk and nonfat sour cream in an effort to make this just a little better for us! Tasted AWESOME!
Baked Potato Soup
Ingredients
• 12 slices bacon (omit for vegetarian)
• 2/3 cup margarine
• 2/3 cup all-purpose flour
• 3 cups milk
• 4 cups chicken or vegetable broth
• 4 large baked potatoes, peeled and cubed (or 8 small)
• 1 bunch green onions, chopped
• 2 cups shredded Sharp Cheddar cheese
• 1 cup sour cream
• 1 teaspoon salt
• 1 teaspoon ground black pepper
Directions
1. Bake potatoes in microwave or oven. Cut into large cubes or ½ thick half rounds.
2. Fully cook bacon, drain, and set aside. Crumble when cool.
3. In a large pot, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk ½ cup at a time, whisking constantly until thickened.
4. Add broth then stir in potatoes and onions. Bring to a boil, stirring frequently.
5. Reduce heat, and simmer 10 minutes (or transfer to a crock pot on high). Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted. Add more salt to taste if bacon is omitted.
